Avocado and Lime Cake

With nearly 20 vitamins and minerals in every serving, avocados are a real super food. Eating them in moderation helps to fight off disease and infection. Full of B vitamins along with a good supply of vitamins C and E, they are low in sugar and contain a nice dose of fiber, which helps you feel full longer and keeps you regular. It’s high in fat, but the good type of fat that can actually help lower bad cholesterol. Plus, plus potassium helps control blood pressure. Folate is great for pregnant women, and lutein is good for your eyes. What more can I say, avocados are a super food available at a great price.
Let’s not think guacamole, which I love by the way. Let’s think cake. A moist, flavorful, delicious and delectable, mouthwatering cake that is, yes, made from avocado.
Avocado and Lime Cake
Serves 10
Ingredients:
3 oz unsalted butter
8 oz sugar, sieve
1 lime, zest and juice of
1 very ripe avocado, stone removed and flesh mashed
1 teaspoon vanilla extract
8 oz plain flour, sieve
⅛ teaspoon sea salt, sieve
1 teaspoon baking powder, sieve
2 large eggs
4 oz almond milk
For the frosting:
1 very ripe avocado, stone removed and flesh mashed
1 lime, zest and juice of
2 tablespoons unsalted butter
4 oz confectioners’ sugar, sifted
How to make:
Preheat oven to 360°F. Grease and line 2-pound loaf tin. Place everything into your blender. Blend until smooth. Spoon the mixture into your prepared loaf tin. Bake in the oven for 50 to 60 minutes or until a skewer inserted in the middle of the loaf comes out clean. Remove from the oven, and allow to cool for 15 minutes before removing from the tin and peeling of the paper. Allow to cool completely.
To make the frosting, whisk avocado, lime juice, butter, and sugar together until smooth. When the cake is cold, spread over the top, and sprinkle with the remaining lime zest.
