Last Of The Home Grown Tomatoes

I love simple yet delicious food that’s both quick and easy to put together for a snack in-between meals or something that could turn out to be a lite lunch for that day. There’s nothing better than using your last batch of home grown tomatoes or some that you might have picked up from your local farmers market on the weekend.

I remember picking my father’s tomatoes from the vines in his greenhouse many many years ago. There’s the smell of freshness as you brought the fruit to your nose, felt how firm and round they were in your hand, then a quick wipe with a cloth and then biting into the firm succulent flesh. To me that’s REAL FOOD!!! You don’t have to add anything or do anything to improve its smell, flavor or texture.

For this recipe, I’ve taken my last few tomatoes of this year, added an herb yogurt spread and toasted some beautiful whole wheat bread I picked up at my favorite bakery. It makes an easy healthy snack for my boys, literally takes minutes to put together and tastes wonderful.

Tomatoes are an excellent source of Vitamin A, B complex, C, potassium and phosphorus. Home grown or vine ripened tomatoes have usually twice as many vitamins as commercially grown tomatoes. The commercial kind are normally picked when still green and then artificially ripened using ethylene gas, giving you a product that looks fabulous but has little taste, unfortunately, so grow your own or buy local. Botanically speaking, tomatoes are a fruit, but technically a berry!!!  It’s weird I know, but still an amazing food.

Last Of The Home Grown Tomatoes On Toast!!!!

Serves 4

4 thick cut slices of freshly made whole-wheat bread

¼ cup Greek yogurt or homemade hummus

1 teaspoon freshly chopped parsley

1 teaspoon freshly chopped chives

A squeeze of fresh lemon juice

2 home grown tomatoes or heirloom tomatoes from your local farmers market or store

1 teaspoon pumpkin or sunflower seeds

A sprinkle of black pepper

How To Make:

Toast the bread to your liking.

Take a small bowl and add the yogurt, herbs and juice, thoroughly mix well.

Spread the yogurt and herb mixture onto the warm toast.

Slice the tomatoes into ¼ inch rounds and place on the yogurt.

Sprinkle with pumpkin or sunflower seeds and black pepper, enjoy the freshness!!!

  1. Thanks for the article “Last of the Home grown Tomatoes ” I love it because it presents a simple different way to prepare toasts. The tomato I use some times is organic, they taste better in a salad or sauce. Ah…. every day we learn something new ..Tomatoes are berries. 🙂

The tomato I select fot salads is bought at the store because I just have a small balcony in my apt. When planning a recipe I love I prefer to use organic tomatoes because they taste a lot better. Ahh… every day I learn something new…tomatoes are compared to berries… 🙂
