Seafood Bucatini

Scallops are more than 80 percent protein, very low in calories, and contain a least 18 vitamins and minerals.

Seafood Bucatini

Serves 4

Ingredients:

2 tablespoons olive oil

1 small onion, peeled and chopped

4 cloves garlic, peeled and minced

1x 16oz can chopped tomatoes

Sea salt

Freshly ground black pepper

12oz bucatini pasta

1 tablespoon oregano leaves

1 tablespoon freshly chopped parsley

8oz baby scallops

1lb mussels

8oz clams

2 cups baby spinach

How to make:

Take a large saucepan and place on the stove over a medium heat, when hot add the oil and onions, cook for 2 minutes, then add the garlic, cook for 1 minute. Add the tomatoes, stir and reduce the heat to a simmer. Cook for 10 minutes, season with salt and pepper.

While the sauce is cooking: Cook the pasta according to the package directions. Drain, reserving ½ cup of the cooking liquid. Place the pasta in the tomato sauce with the oregano, parsley and scallops, move to the side of the stove so the sauce can gentle simmer, while you cook the mussels and clams.

Using the pasta saucepan and the leftover pasta liquid, place back on heat and bring the liquid to a boil, add the mussels and clams, place on a lid and allow to cook for 4 to 5 minutes or until all the shells have opened (discarding any shells that don’t open). Add the mussels, clams and any remaining pasta liquid to the tomato sauce, make sure that the scallops are cooked, stir in the baby spinach and serve. (a sprinkling of your favorite cheese, optional) Enjoy!!!!
