Shrimp & Eggs
Shrimp & eggs, doesn’t that sound good? Just the words make your mouth water. When you’re cooking this dish, close your eyes, take a deep breath and inhale the lovely combination of aromas. The tender, succulent shrimp mixes with the gooey raw egg as it fries to perfection on the stove top. The dish finishes under the broiler to form a slightly crisp exterior that cracks when you cut through it with your knife.
The good thing is this shrimp and egg dish is easy to make. It literally and takes minutes to prepare and cook. Yet, it tastes delicious and looks elegant and sophisticated. Add some tomatoes, green onions, chili flakes for a little kick-in-the-butt heat, fresh herbs such as oregano and finish with a sprinkling of Feta cheese. Shrimp & Eggs
Serves 2
Ingredients:
1 tablespoon olive oil
8 large raw shrimp, peeled, deveined and roughly chopped
1 ripe tomato, cored and roughly chopped
1 green onion, roughly chopped
Sea salt
Freshly ground black pepper
Pinch of dried chili flakes
4 large eggs, beaten
1 teaspoon fresh oregano, chopped
2 tablespoon feta cheese, crumbled
Preheat broiler
How to make:
Take a small non-stick frying pan, place on the stove, add the oil, when hot add the shrimp and cook for 2 minutes, then add the chopped tomato and green onions and cook for 2 minutes, season with salt, pepper and the chili flakes.
Pour in the beaten eggs and stir until you feel the eggs are starting to set on the bottom of the pan, then stir in the chopped oregano and feta cheese, then pop the pan under the broiler and continue to cook for 2 to 3 minutes until the eggs are cooked through, remove and serve.
