Real food. Real flavor. Real life.
This is a warm, hearty, one-bowl meal built around creamy white beans, browned chicken sausage, kale, garlic, herbs, and a light Parmesan finish. It feels rich and satisfying, but the foundation is simple: beans for fiber, greens for plant power, sausage for protein and flavor, and olive oil for healthy fat.
It fits the MW&B approach because it is real food, practical, filling, and easy to repeat. It also supports the MW&B recipe promise: helping people in midlife eat real food, support strength, improve energy, and enjoy the process.

Ingredients
For the Beans
- 2 tablespoons extra virgin olive oil
- 12 oz chicken sausage, sliced into rounds
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 cans cannellini beans or navy beans, drained and rinsed
- 2 cups low-sodium chicken stock or vegetable stock
- 3 cups chopped kale, stems removed
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon chili flakes, optional
- ¼ cup freshly grated Parmesan cheese
- 1 tablespoon lemon juice
- Sea salt
- Freshly ground black pepper
To Finish
- Extra Parmesan, lightly grated
- Fresh parsley or thyme
- Drizzle of extra virgin olive oil
- Extra black pepper
Method
Heat a large sauté pan or shallow Dutch oven over medium heat. Add 1 tablespoon olive oil.
Add the sliced chicken sausage and cook for 4–5 minutes, turning once, until browned on both sides. Remove the sausage from the pan and set aside.
Add the remaining tablespoon of olive oil to the same pan. Stir in the onion and cook for 3–4 minutes, until softened.
Add the garlic, oregano, thyme, chili flakes if using, salt, and black pepper. Cook for 30 seconds, just until fragrant.
Add the beans and stock. Bring to a gentle simmer.
Using the back of a spoon, lightly mash some of the beans into the broth. This helps create a creamy texture without needing heavy cream.
Simmer for 10–12 minutes, stirring occasionally, until the mixture thickens slightly.
Stir in the kale and cook for 3–4 minutes, until tender and bright green.
Return the browned chicken sausage to the pan and cook for another 2–3 minutes, until everything is hot.
Turn off the heat. Stir in Parmesan and lemon juice.
Taste and adjust with more black pepper, lemon, or a small pinch of salt if needed.
Spoon into shallow bowls and finish with extra Parmesan, herbs, olive oil, and cracked black pepper.
MW&B Why This Fits
Real Food First: Beans, kale, garlic, onion, olive oil, herbs, lemon, and Parmesan keep this grounded in recognizable ingredients.
Build and Keep Muscle: Chicken sausage and beans both provide protein. For a main meal, this gives enough protein to support muscle maintenance, satiety, and recovery.
Plants Lead the Plate: Kale, onions, garlic, beans, herbs, and lemon give this dish plant variety, color, and flavor.
Gut Health: White beans are rich in fiber, which supports digestion, fullness, and gut health. Kale adds more fiber and plant compounds.
Steady Energy: Beans provide slow-digesting carbohydrates, fiber, and protein, helping this meal feel filling without relying on refined carbs.
Healthy Fats: Extra virgin olive oil adds flavor, satisfaction, and better fat quality.
Reduce Harmful Inputs: Using low-sodium stock and chicken sausage keeps this lighter than many cream-heavy sausage dishes. It is still important to choose a sausage with a shorter ingredient list and moderate sodium.
Flavor Is Compliance: Garlic, browned sausage, herbs, Parmesan, lemon, and olive oil make this satisfying enough to want again.

MW&B Serving Suggestion
Serve this as a complete bowl on its own, or pair it with:
- A simple arugula salad
- Roasted carrots or broccoli
- A slice of toasted sourdough
- Brown rice, farro, or quinoa for a more active-day meal
Chef Mark’s Tip
Mash a small portion of the beans into the stock while the dish simmers. That gives the bowl a creamy, comforting texture without needing cream. Finish with lemon juice at the end to brighten the whole dish.
Real food, real flavor, real life.
