- 1 tablespoon avocado oil or extra virgin olive oil
- 1 tablespoon sesame seeds
- 2 scallions, thinly sliced
- Black pepper, to taste
For the sesame ginger glaze
- 2 tablespoons low-sodium tamari or soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon fresh orange juice or lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon toasted sesame oil
- 1 teaspoon fresh ginger, grated
- 1 garlic clove, finely grated
- ½ teaspoon chili flakes or chili crisp, optional
For the bok choy
- 6 baby bok choy, halved lengthwise
- 1 tablespoon avocado oil or extra virgin olive oil
- 1 teaspoon toasted sesame oil
- 1 garlic clove, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon low-sodium tamari or soy sauce
- 1 tablespoon water
- 1 teaspoon rice vinegar
- 1 teaspoon sesame seeds
Method
- Make the glaze.
In a small bowl, whisk together tamari, rice vinegar, orange or lime juice, honey or maple syrup, sesame oil, ginger, garlic, and chili flakes if using. - Marinate the salmon.
Pat the salmon dry. Spoon half of the glaze over the fillets and let sit for 15 minutes. Save the remaining glaze for finishing. - Cook the salmon.
Heat oil in a large skillet over medium-high heat. Place the salmon flesh-side down and sear for 3–4 minutes, then turn and cook another 3–5 minutes, depending on thickness, until just cooked through. - Glaze the salmon.
Spoon the reserved glaze over the salmon during the final minute of cooking. Let it bubble slightly and coat the fish. Do not walk away here. Sugar plus heat has the emotional stability of a toddler. - Cook the bok choy.
In a separate skillet, heat avocado oil and sesame oil over medium-high heat. Place bok choy cut-side down and cook for 2–3 minutes, until lightly charred. - Steam and season.
Add garlic and ginger. Cook for 30 seconds, then add tamari, water, and rice vinegar. Cover and steam for 2–3 minutes, until tender but still bright green. - Plate.
Arrange the bok choy on plates and place the salmon on top or alongside. - Finish.
Sprinkle with sesame seeds, sliced scallions, and black pepper.

Chef Mark’s Tip
Pat the salmon dry before searing. A dry surface gives you better color and helps the glaze cling to the fish.
MW&B Serving Suggestion
Serve this with brown rice, quinoa, cauliflower rice, or soba noodles. For the strongest MW&B plate, pair the salmon and bok choy with quinoa or brown rice and a cucumber-herb salad.
