Seared Steak with Mushroom Peppercorn Sauce

Real food. Real flavor. Real life.

This dish is a classic steak-and-mushroom plate with an MW&B approach: quality protein, real ingredients, deeply savory mushrooms, garlic, herbs, and a lighter creamy sauce that gives you richness.

Steak provides high-quality protein, mushrooms bring earthy flavor and plant variety, and the sauce is built with stock, Greek yogurt or a small amount of cream, Dijon, garlic, and black pepper. It feels indulgent, but it can still fit a strong, balanced midlife plate when served with vegetables and smart portions.

Ingredients

For the Steak

  • 1½ lb sirloin, flank steak, strip steak, or ribeye
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary, chopped
  • Sea salt
  • Freshly ground black pepper

For the Mushroom Peppercorn Sauce

  • 1 tablespoon extra virgin olive oil
  • 8 oz cremini or baby bella mushrooms, sliced
  • 1 small shallot, finely diced
  • 2 cloves garlic, minced
  • ½ cup low-sodium beef stock or chicken stock
  • 1 teaspoon Dijon mustard
  • ½ teaspoon cracked black pepper, or more to taste
  • ¼ cup plain Greek yogurt, crème fraîche, or a splash of cream
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves, optional
  • Sea salt, to taste

Method

Pat the steak dry with a paper towel. Season both sides with salt, black pepper, garlic, Dijon mustard, herbs, and olive oil.

Let the steak sit at room temperature for 10–15 minutes while you prepare the mushrooms.

Heat a large skillet or cast-iron pan over medium-high heat.

Add the steak and cook for 3–5 minutes per side, depending on thickness and desired doneness.

Transfer the steak to a cutting board and let it rest for 5–10 minutes before slicing.

In the same pan, reduce the heat to medium. Add 1 tablespoon olive oil and the sliced mushrooms.

Cook for 5–6 minutes, stirring occasionally, until the mushrooms are browned and their moisture has cooked off.

Add the shallot and garlic. Cook for 1–2 minutes, just until softened.

Pour in the stock and scrape up any browned bits from the bottom of the pan. That is flavor, not kitchen debris. Important distinction.

Stir in the Dijon mustard and cracked black pepper.

Simmer for 3–4 minutes until the sauce reduces slightly.

Lower the heat and stir in the Greek yogurt, crème fraîche, or cream. Do not boil after adding Greek yogurt or it may split.

Taste and adjust with salt and more black pepper if needed.

Slice the steak against the grain and spoon the mushroom peppercorn sauce over the top.

Finish with parsley and thyme.

Serve warm.

MW&B Why This Fits

Real Food First:
This recipe is built from steak, mushrooms, garlic, shallots, herbs, olive oil, stock, Dijon, and Greek yogurt or cream. Real ingredients, clear flavor, no bottled steakhouse sauce with a paragraph of chemical additives.

Build and Keep Muscle:
Steak provides complete protein, iron, zinc, and B vitamins. Protein is especially important in midlife for maintaining muscle, strength, metabolism, and independence.

Plants Lead the Plate:
Mushrooms, garlic, shallots, parsley, thyme, and optional vegetable sides bring plant variety and flavor. For a stronger MW&B plate, serve this with greens or roasted vegetables.

Healthy Fats:
Extra virgin olive oil adds flavor and better fat quality. Using Greek yogurt or a small amount of cream keeps the sauce rich without making it overly heavy.

Gut Health:
Mushrooms, herbs, garlic, and shallots add plant compounds. Add a side of vegetables, lentils, beans, or a green salad to increase fiber.

Steady Energy:
Protein from the steak, fat from olive oil and sauce, and fiber from vegetable sides make this more balanced and satisfying.

Reduce Harmful Inputs:
This homemade version avoids ultra-processed sauces, added sugar, and excess sodium. Choose low-sodium stock and season thoughtfully.

Flavor Is Compliance:
Seared steak, browned mushrooms, garlic, Dijon, herbs, and black pepper create a satisfying plate. Healthy eating works better when the food tastes like something you actually want to eat again.

MW&B Serving Suggestion

To make this a complete MW&B plate, serve with:

  • Roasted broccoli
  • Green beans with garlic
  • Sautéed spinach
  • Arugula salad with lemon and olive oil
  • Roasted carrots
  • Mashed cauliflower
  • Roasted potatoes or sweet potatoes for a more active-day meal

Chef Mark’s Tip

Do not crowd the mushrooms in the pan. If they are piled on top of each other, they steam instead of brown. Give them space and let them develop color before adding the stock. That browning is where the flavor starts.

Real food, real flavor, real life.
