with Creamy Lemon Tahini Hummus
This bowl is basically the MW&B sweet spot in one dish: roasted vegetables, chickpeas, herbs, olive oil, and a creamy hummus-style base that pulls everything together. The carrots, broccoli, red onion, and eggplant bring color and fiber, the chickpeas add plant-based protein, and the lemon tahini hummus gives it richness without needing cheese, cream, or some ultra processed bottled dressing.
This fits the Midlife Wellness & Beyond recipe framework because MW&B recipes should be built around whole or minimally processed ingredients, lead with plants, include protein where possible, use healthy fats, and bring flavor through herbs, spices, citrus, texture, and real cooking technique.

Method
- Preheat the oven.
Preheat oven to 425°F. Line a large baking sheet with parchment paper. - Season the vegetables and chickpeas.
Add broccoli, carrots, eggplant, red onion, and chickpeas to a large bowl. Toss with olive oil, smoked paprika, cumin, garlic powder, oregano, salt, black pepper, and red pepper flakes if using. - Roast.
Spread everything onto the baking sheet in a single layer. Roast for 25–30 minutes, turning once halfway through, until the vegetables are browned and tender and the chickpeas are lightly crisped. - Make the hummus base.
In a food processor, combine chickpeas, tahini, olive oil, lemon juice, lemon zest, garlic, cumin, salt, and black pepper. Blend until smooth, adding warm water one tablespoon at a time until creamy and spoonable. - Taste and adjust.
Add more lemon juice, pepper, or cumin if needed. The hummus should be bright, creamy, and savory, not beige paste with dreams. - Build the bowl.
Spread the lemon tahini hummus across the bottom of a shallow serving bowl or individual plates. - Add the roasted vegetables.
Spoon the roasted vegetables and chickpeas over the hummus. - Finish.
Top with parsley, black pepper, a drizzle of olive oil, and a squeeze of lemon. Add smoked paprika or sumac if using.

Chef Mark’s Tip
Pat the chickpeas dry before roasting. Removing excess moisture helps them crisp instead of steaming. Same goes for the vegetables: give them room on the pan. Crowded vegetables steam.
MW&B Serving Suggestion
Serve this as a plant-forward lunch or side dish. To make it a stronger MW&B main meal, add grilled chicken, salmon, shrimp, tofu, or lentils. For a heartier bowl, serve it over quinoa, farro, or brown rice with extra lemon and herbs.
