Roasted Sweet Potatoes with Whipped Feta, Herbs & Spiced Honey

These roasted sweet potatoes are sweet, savory, creamy, bright, and just messy enough to feel worth eating. The sweet potatoes bring fiber-rich carbohydrates, the feta adds tang and protein, the herbs bring freshness, and the spiced honey-olive oil drizzle gives the whole dish a little heat and shine without turning it into dessert wearing a vegetable disguise.

This fits the MW&B recipe profile because it uses real ingredients, leads with plants, includes healthy fats, keeps the flavor bold, and works as a smart side dish, lunch base, or vegetable-forward plate. MW&B recipes are built around whole foods, plants, protein where possible, healthy fats, practical nutrition, and flavor people actually want to repeat.

Serves: 4
Prep time: 10 minutes
Cook time: 30–35 minutes
Total time: 45 minutes

Ingredients

For the roasted sweet potatoes

  • 3 large sweet potatoes, scrubbed and cut into long wedges
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes, optional

For the whipped feta

  • 4 oz feta cheese
  • ½ cup plain Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Black pepper, to taste

For the spiced honey herb drizzle

  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint or cilantro, chopped
  • Pinch of sea salt

Optional finish

  • Extra crumbled feta
  • Toasted pumpkin seeds or walnuts
  • Extra parsley
  • Lemon wedges

Method

  1. Preheat the oven.
Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Season the sweet potatoes.
Place the sweet potato wedges on the baking sheet. Toss with olive oil, smoked paprika, cumin, garlic powder, salt, black pepper, and red pepper flakes if using.
  3. Roast until caramelized.
Spread the wedges out in a single layer. Roast for 30–35 minutes, turning once halfway through, until tender inside and browned at the edges.
  4. Make the whipped feta.
Add feta, Greek yogurt, olive oil, lemon juice, lemon zest, and black pepper to a food processor. Blend until smooth and creamy. Add a splash of water if needed to loosen.
  5. Make the drizzle.
In a small bowl, whisk together honey, olive oil, lemon juice, Dijon mustard, red pepper flakes, parsley, mint or cilantro, and sea salt.
  6. Assemble.
Spoon the whipped feta onto a serving platter or serve it underneath the sweet potatoes. Arrange the roasted sweet potatoes over the top.
  7. Finish.
Drizzle with the spiced honey herb dressing. Sprinkle with extra feta, herbs, and toasted pumpkin seeds or walnuts if using.

Chef Mark’s Tip

Roast the sweet potatoes cut-side down for the first half of cooking. That gives them better caramelization and a deeper roasted flavor. Crowding the pan will steam them instead of roast them, which is how sweet potatoes lose their will to live.

MW&B Serving Suggestion

Serve this as a side dish with grilled salmon, roasted chicken, shrimp, or lentils. To make it a complete MW&B bowl, place the sweet potatoes over arugula or kale, add chickpeas or grilled protein, and finish with extra lemon and herbs.
