Roasted Strawberries with Burrata, Pistachios & Balsamic Glaze

Sweet roasted strawberries, creamy burrata, crunchy pistachios, fresh basil, a little heat from red pepper flakes, and toasted baguette. This is simple, beautiful, and a little unexpected without trying too hard, which is always appreciated.

Serves

4 to 6 as an appetizer

Ingredients

  • 2 pints fresh strawberries, half left whole the other half hulled and sliced in half
  • 2 tablespoons local honey
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon crushed red pepper flakes, or more if you like a little heat
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 ball burrata cheese, about 8 oz
  • 1/4 cup chopped pistachios
  • 2 tablespoons balsamic glaze
  • 1 small handful fresh basil leaves, torn
  • 1 baguette, sliced
  • Extra olive oil, for brushing the bread

Method

Preheat the oven to 400°F.

Place all the strawberries in a small baking dish. Add the honey, olive oil, crushed red pepper flakes, salt, and black pepper. Toss gently so the strawberries are well coated.

Roast for 18 to 20 minutes, until the strawberries are soft, glossy, and starting to release their juices. They should look syrupy, not dried out.

While the strawberries roast, lightly brush the baguette slices with olive oil. Place them on a baking sheet and toast in the oven for 8 to 10 minutes, until golden and crisp.

Remove the strawberries from the oven and let them cool for 2 to 3 minutes.

Place the burrata in the center of the warm roasted strawberries. Tear it open slightly so the creamy center spills into the fruit.

Sprinkle the chopped pistachios over the top.

Drizzle with balsamic glaze.

Finish with torn basil leaves, a little extra black pepper, and another tiny pinch of red pepper flakes if you want more heat.

Serve warm with the toasted baguette slices.

Why This Works

The strawberries become sweeter and richer as they roast. The honey deepens that sweetness, while the olive oil makes everything glossy and satisfying.

The burrata adds creaminess and balances the sweet and spicy flavors.

The pistachios bring crunch, healthy fats, and a little protein.

The basil keeps the dish fresh, and the balsamic glaze adds acidity and depth.

The red pepper flakes are the small surprise.

MW&B Notes

This dish fits Midlife Wellness & Beyond because it is built around real ingredients: fruit, olive oil, nuts, herbs, quality cheese, and bread.

It is not low calorie, and it does not need to be. The goal is balance. You get fruit, healthy fats, some protein, fiber, flavor, and pleasure.

For more fiber, use whole grain sourdough or seeded bread instead of a white baguette.

For more protein, serve with grilled chicken, shrimp, or white beans.

For a lighter version, use less bread and serve with cucumber slices, endive leaves, or seeded crackers.

For a more savory version, add arugula or a few thin slices of prosciutto.
