Roasted Eggplant with Garlic, Chili, Lemon & Herbs

Real food. Real flavor. Real life.

Eggplant is one of those vegetables that can either be wonderful or completely forgettable. The difference usually comes down to heat, seasoning, and enough patience to let it properly caramelize.

This recipe keeps it simple: thick slices of eggplant roasted until golden, soft in the middle, and slightly crisp around the edges. Garlic, chili, lemon, olive oil, black pepper, and fresh herbs bring the flavor to life.

It works as a side dish, a plant-forward starter, or part of a larger MW&B plate with protein, greens, and smart carbohydrates.

Roasted Eggplant with Garlic, Chili, Lemon & Herbs

Serves

4 as a side dish
2 as a light plant-forward meal

Prep Time

10 minutes

Cook Time

25–30 minutes

Total Time

35–40 minutes

Ingredients

For the Eggplant

  • 2 large eggplants
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, finely minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes, or to taste
  • ½ teaspoon ground coriander, optional
  • Sea salt
  • Freshly ground black pepper
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice

For Finishing

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh cilantro or mint, chopped
  • 1 tablespoon extra virgin olive oil
  • Extra lemon juice, to taste
  • Pinch of chili flakes
  • Optional: 2 tablespoons toasted pine nuts, pistachios, or almonds
  • Optional: 2 tablespoons crumbled feta or a spoonful of Greek yogurt

Method

Preheat the oven to 425°F.

Slice the eggplants lengthwise into thick wedges or rounds, about ¾ inch thick.

Place the eggplant on a large baking tray.

In a small bowl, mix the olive oil, garlic, cumin, smoked paprika, chili flakes, coriander if using, salt, black pepper, lemon zest, and lemon juice.

Brush or spoon the mixture over both sides of the eggplant.

Spread the eggplant out in a single layer. Do not overcrowd the tray, unless you enjoy steamed eggplant pretending to be roasted.

Roast for 25–30 minutes, turning once halfway through, until the eggplant is golden, tender, and caramelized at the edges.

Transfer to a serving plate.

Finish with fresh parsley, cilantro or mint, olive oil, lemon juice, and a final pinch of chili flakes.

Add toasted nuts, feta, or Greek yogurt if using.

Serve warm or at room temperature.

Why This Works

Eggplant needs proper heat. Roasting brings out its natural sweetness and gives it a soft, almost creamy texture inside while the edges become golden and flavorful.

Garlic and spices add depth. Lemon lifts the richness. Chili gives heat. Fresh herbs keep the dish bright.

It is simple food, but when cooked properly, it feels generous and satisfying.

MW&B Why This Fits

Real Food First:
This dish is built from eggplant, olive oil, garlic, lemon, herbs, and spices. Nothing complicated. Nothing ultra-processed. Just real ingredients handled well.

Plants Lead the Plate:
Eggplant, garlic, lemon, parsley, cilantro, and spices all bring plant variety, flavor, and color.

Gut-Friendly Fiber:
Eggplant provides fiber, which supports digestion and helps make meals more satisfying.

Healthy Fats:
Extra virgin olive oil adds richness and helps carry the flavors. It also makes the eggplant feel satisfying rather than dry and joyless.

Flavor Is Compliance:
The garlic, chili, spices, lemon, and herbs make this a vegetable dish people actually want to eat again.

Flexible for Real Life:
Serve it hot, warm, or room temperature. Add protein and it becomes part of a complete meal.

Simple Yogurt Herb Sauce

This works beautifully with the roasted eggplant.

Ingredients

  • ¾ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1 small garlic clove, grated
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint or cilantro
  • Sea salt
  • Black pepper

Method

Mix everything together in a small bowl.

Taste and adjust with lemon, salt, or herbs.

Spoon under or over the roasted eggplant.

Chef Mark’s Tip

Salt the eggplant lightly before roasting and let it sit for 10 minutes if you have time. Pat it dry before adding the oil and spices. This helps remove a little excess moisture and gives you better roasting.

Most importantly, roast it hot and give it space. Eggplant needs color. Pale eggplant has the personality of wet cardboard, and nobody invited that to dinner.

Real food, real flavor, real life.
