Roasted Cauliflower & Red Lentil Coconut Curry

with Garlic, Ginger, Turmeric & Fresh Herbs

This dish is warm, earthy, comforting, and deeply satisfying while still fitting beautifully into the Midlife Wellness & Beyond approach. The roasted cauliflower brings texture and caramelized flavor, the red lentils add plant-based protein and fiber, and the curry-spiced coconut-tomato base makes the whole thing feel rich without needing anything overly processed or heavy. It is exactly the kind of meal that proves plant-forward food can be comforting, nourishing, and full of actual personality. The MW&B recipe framework emphasizes real ingredients, practical wellness, plants, healthy fats, and flavor that makes people want to come back for another bowl.

Serves: 4
Prep time: 15 minutes
Cook time: 35 minutes
Total time: 50 minutes

Ingredients

For the roasted cauliflower

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon curry powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

For the curry

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon crushed red pepper flakes, optional
  • 1 cup red lentils, rinsed
  • 1 can light coconut milk
  • 2 cups low-sodium vegetable broth
  • 1 cup crushed tomatoes or tomato puree
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh lemon juice or lime juice
  • Sea salt and black pepper, to taste

To finish

  • 2 tablespoons fresh cilantro or parsley, chopped
  • Extra black pepper
  • Optional: plain Greek yogurt or a spoonful of coconut yogurt
  • Optional: cooked brown rice, quinoa, or naan for serving

Method

  1. Preheat the oven.
Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Roast the cauliflower.
Toss the cauliflower florets with olive oil, curry powder, cumin, smoked paprika, salt, and pepper. Spread on the baking sheet and roast for 25–30 minutes, turning once halfway through, until tender and nicely browned at the edges.
  3. Start the curry base.
While the cauliflower roasts, heat olive oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes until softened.
  4. Add the aromatics.
Stir in the garlic and ginger and cook for 30 seconds. Add curry powder, turmeric, cumin, coriander, and red pepper flakes if using. Stir for another 30 seconds until fragrant.
  5. Build the curry.
Add the red lentils, coconut milk, broth, crushed tomatoes, and tomato paste. Stir well and bring to a gentle simmer.
  6. Cook until creamy.
Simmer uncovered for 20–25 minutes, stirring occasionally, until the lentils are soft and the curry has thickened. Add more broth if needed to loosen the texture.
  7. Finish the flavor.
Stir in the lemon or lime juice. Taste and season with salt and black pepper.
  8. Assemble and serve.
Spoon the curry into bowls and top with the roasted cauliflower. Finish with chopped cilantro or parsley and any optional toppings.

MW&B Why This Fits

Real Food First:
This recipe is built from cauliflower, onion, garlic, ginger, lentils, coconut milk, tomatoes, herbs, and spices.

Plants Lead the Plate:
Cauliflower, onion, tomatoes, garlic, ginger, and herbs make this a plant-forward dish with strong color, flavor, and variety.

Protein with Purpose:
Red lentils provide plant-based protein and help make the dish more satisfying, which matters if lunch is supposed to keep you going instead of abandoning you an hour later.

Gut Health and Fiber:
Cauliflower and lentils provide fiber, which supports digestion and helps keep the meal filling.

Healthy Fats:
Coconut milk and olive oil add richness and help carry the curry spices without needing processed sauces or a dairy overload.

Flavor Is Compliance:
Roasting the cauliflower adds depth, and the curry spices, garlic, ginger, and herbs make this taste like an actual filling meal.

Chef Mark’s Tip

Roast the cauliflower separately instead of simmering it in the curry from the start. That extra caramelization gives the dish much more flavor and keeps the florets from turning soft and forgettable.

MW&B Serving Suggestion

Serve this on its own for a plant-forward meal, or pair it with:

  • Brown rice for extra staying power
  • Quinoa for a little more protein
  • Grilled chicken or salmon if you want to increase the protein further
  • A cucumber herb salad for freshness and crunch

For the strongest MW&B plate, serve it with quinoa and a crisp green salad. That gives you plants, fiber, healthy fats, balanced carbohydrates, and enough flavor to make healthy eating feel like a good idea to have more often.
