Roasted Brussels Sprouts with Whipped White Bean Hummus

This is a simple vegetable-forward dish that looks clean and restaurant-worthy but still fits the Midlife Wellness & Beyond kitchen. The Brussels sprouts bring fiber, texture, and deep roasted flavor, while the whipped white bean hummus adds creaminess, plant-based protein, and a softer balance underneath. It is rich without being heavy, satisfying without needing a mountain of grated cheese.

This fits the MW&B recipe framework because it is built around real ingredients, leads with plants, includes fiber, uses healthy fats, and relies on flavor from roasting, lemon, garlic, herbs, and olive oil instead of processed shortcuts.

Serves: 4
Prep time: 15 minutes
Cook time: 25–30 minutes
Total time: 45 minutes

Ingredients

For the roasted Brussels sprouts

  • 1½ lbs Brussels sprouts, trimmed and halved
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh lemon juice

For the whipped white bean hummus

  • 1 can white beans, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, finely grated
  • ½ teaspoon lemon zest
  • ¼ teaspoon sea salt
  • Black pepper, to taste
  • 2–4 tablespoons warm water, to thin

To finish

  • 1 tablespoon extra virgin olive oil
  • Fresh thyme leaves or microgreens, optional
  • Freshly ground black pepper
  • Pinch of flaky sea salt, optional
  • Lemon wedges

Method

  1. Preheat the oven.
Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Season the Brussels sprouts.
Add the Brussels sprouts to a bowl with olive oil, salt, pepper, garlic powder, smoked paprika, and thyme. Toss well.
  3. Roast until golden.
Spread the Brussels sprouts cut-side down on the baking sheet. Roast for 25–30 minutes, turning once, until browned at the edges and tender inside.
  4. Make the whipped white bean hummus.
In a food processor, combine white beans, tahini, olive oil, lemon juice, garlic, lemon zest, salt, and black pepper. Blend until smooth, adding warm water one tablespoon at a time until creamy and spoonable.
  5. Brighten the sprouts.
When the Brussels sprouts come out of the oven, toss them with fresh lemon juice.
  6. Plate the dish.
Spread the whipped white bean hummus onto the base of a shallow bowl or serving plate.
  7. Finish.
Arrange the roasted Brussels sprouts over the hummus. Drizzle with olive oil and finish with thyme, microgreens if using, black pepper, and a small pinch of flaky sea salt if using.

MW&B Why This Fits

Real Food First:
This recipe uses Brussels sprouts, white beans, tahini, lemon, garlic, herbs, and olive oil. Nothing weird, powdered, or pretending to be wellness in a packet.

Plants Lead the Plate:
Brussels sprouts, white beans, garlic, lemon, herbs, and microgreens make this a strong plant-forward dish.

Gut Health and Fiber:
Brussels sprouts and white beans provide fiber, which helps support digestion and makes the dish more satisfying.

Protein Support:
White beans and tahini add plant-based protein. For a higher-protein MW&B meal, serve this with salmon, chicken, shrimp, tofu, or lentils.

Healthy Fats:
Extra virgin olive oil and tahini add satisfying fats and help carry the garlic, lemon, and herb flavors.

Flavor Is Compliance:
Roasting brings out sweetness and caramelization, while lemon, garlic, tahini, thyme, and olive oil keep the dish bright and savory. This is how vegetables convince people to stop acting like eating them is a punishment.

Chef Mark’s Tip

Roast the Brussels sprouts cut-side down and give them space on the pan. Crowding makes them steam instead of caramelize. Brown edges mean flavor; pale Brussels sprouts are just tiny green disappointments.

MW&B Serving Suggestion

Serve this as a starter, side dish, or plant-forward lunch. To make it a complete MW&B meal, pair it with:

  • Grilled salmon
  • Roasted chicken
  • Shrimp
  • Lentils
  • Tofu
  • A quinoa and herb salad

For the strongest MW&B plate, serve it with grilled salmon or lentils and a simple arugula salad. That gives you protein, plants, fiber, healthy fats, and a meal that feels polished and filling.
