Real-Ingredient Chocolate Brownies

Real food. Real flavor. Real life.

Brownies are not something we need to apologize for. The goal is not to remove all pleasure from food and then congratulate ourselves for being miserable. The goal is to make something delicious, use better ingredients where we can, keep portions sensible, and enjoy it properly.

These brownies are rich, fudgy, deeply chocolatey, and made with real ingredients: dark chocolate, cocoa powder, eggs, almond flour, olive oil or butter, vanilla, and just enough sweetness to make them feel like dessert.

They are not “diet brownies.” They are better brownies. There is a difference, and thankfully this one still tastes like chocolate.

Real-Ingredient Chocolate Brownies

Makes

12 brownies

Prep Time

15 minutes

Cook Time

22–28 minutes

Total Time

40–45 minutes

Ingredients

For the Brownies

  • ½ cup extra virgin olive oil, avocado oil, or melted butter
  • ¾ cup dark chocolate chips or chopped dark chocolate, preferably 70%
  • ½ cup coconut sugar, brown sugar, or maple sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup almond flour
  • ¼ cup whole wheat pastry flour or oat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt
  • ¼ cup plain Greek yogurt
  • ½ cup chopped walnuts or pecans, optional
  • ¼ cup extra dark chocolate chips, optional

Method

Preheat the oven to 350°F.

Line an 8-inch square baking pan with parchment paper.

Place the dark chocolate and olive oil, avocado oil, or butter in a heatproof bowl. Melt gently over a pan of simmering water or in short bursts in the microwave, stirring until smooth.

Let the mixture cool slightly.

In a separate bowl, whisk together the eggs, sugar, vanilla, and Greek yogurt until smooth.

Stir in the melted chocolate mixture.

Add the cocoa powder, almond flour, whole wheat pastry flour or oat flour, baking powder, and sea salt.

Mix until just combined.

Fold in the walnuts or pecans and extra dark chocolate chips if using.

Spoon the batter into the prepared pan and smooth the top.

Bake for 20–25 minutes, until the edges are set and the center is still slightly soft.

Do not overbake. Brownies continue to firm as they cool.

Let the brownies cool completely before slicing.

Cut into 12 squares.

Why This Works

The dark chocolate and cocoa powder give deep chocolate flavor.

The almond flour adds moisture and richness.

The Greek yogurt helps keep the texture soft while adding a little protein.

The eggs give structure.

The nuts add crunch, healthy fats, and a more satisfying bite.

The result is a brownie that feels indulgent but is made with ingredients you actually recognize.

MW&B Why This Fits

Real Ingredients:
These brownies use dark chocolate, cocoa, eggs, almond flour, yogurt, vanilla, and nuts. Simple ingredients, no boxed mix required, no mystery powders.

Better Fat Quality:
Olive oil, avocado oil, almonds, and walnuts provide more satisfying fats than many standard processed desserts.

Lower Added Sugar:
This version uses less sugar than many traditional brownie recipes while still tasting like dessert.

Protein and Satiety:
Eggs, Greek yogurt, almond flour, and nuts add a little protein and help make the brownies more satisfying.

Pleasure Matters:
A healthy lifestyle should include food you enjoy. A small homemade brownie with coffee, tea, or shared after dinner can absolutely fit into a balanced way of eating.

MW&B Serving Suggestions

Serve with:

  • Fresh raspberries
  • Blackberries
  • Greek yogurt
  • Cottage cheese
  • A small handful of walnuts
  • Coffee or tea
  • A few sliced strawberries
  • A spoonful of plain yogurt with cinnamon

For a more balanced dessert, serve one brownie with berries and Greek yogurt.

For a richer dessert, warm slightly and serve with extra berries.

Chef Mark’s Tip

Take the brownies out when the center still looks slightly underdone. If you wait until the middle looks fully baked, they will cool into something closer to chocolate paving slabs. Let them rest, then slice with a sharp knife.

For the best texture, chill them for an hour before cutting. Fudgy brownies need time to set properly, which is annoying but worth it.

Real food, real flavor, real life.
