Peach, Prosciutto & Whipped Ricotta Toast

Real food. Real flavor. Real life.

This toast brings together sweet roasted or grilled South Carolina, peaches, creamy whipped ricotta, salty prosciutto, fresh basil, red onion, chili flakes, olive oil, and a drizzle of honey. It is simple, beautiful, and full of flavor.

This works as a light lunch, brunch dish, appetizer, or summer supper alongside a green salad. The key is balance: whole-grain or sourdough bread, protein from ricotta and prosciutto, fruit, herbs, healthy fats, and enough flavor to make you want to eat it again.

Ingredients

For the Toast

  • 2 large slices sourdough or whole-grain bread
  • 1 teaspoon extra virgin olive oil
  • ¾ cup ricotta cheese
  • 1 tablespoon plain Greek yogurt, optional, for extra creaminess and protein
  • Zest of ½ lemon
  • 1 teaspoon fresh lemon juice
  • Sea salt
  • Freshly ground black pepper

For the Peaches

  • 2 ripe peaches or nectarines, sliced
  • 1 teaspoon extra virgin olive oil
  • ½ teaspoon honey
  • Pinch of chili flakes
  • Pinch of sea salt

For Finishing

  • 2–3 slices prosciutto, torn into pieces
  • 2 tablespoons thinly sliced red onion
  • Fresh basil leaves
  • 1–2 teaspoons extra virgin olive oil
  • 1 teaspoon honey, optional
  • Extra chili flakes, to taste
  • Freshly ground black pepper
  • Optional: squeeze of lemon juice

Method

Toast or grill the bread until golden and crisp.

In a small bowl, mix the ricotta with Greek yogurt if using, lemon zest, lemon juice, salt, and black pepper. Whip with a spoon until smooth and creamy.

Heat a skillet or grill pan over medium-high heat.

Toss the peach slices with olive oil, honey, chili flakes, and a pinch of salt.

Cook the peaches for 1–2 minutes per side, just until lightly caramelized and warm.

Spread the whipped ricotta generously over the toasted bread.

Layer the warm peaches over the ricotta.

Add torn prosciutto, sliced red onion, and fresh basil leaves.

Drizzle with olive oil and a little honey if desired.

Finish with chili flakes, black pepper, and a small squeeze of lemon juice.

Serve immediately.

MW&B Why This Fits

Real Food First:
This recipe uses peaches, ricotta, Greek yogurt, sourdough or whole-grain bread, basil, red onion, olive oil, lemon, and chili. Simple ingredients, layered flavor, no ultra-processed spread pretending to be healthy.

Protein Support:
Ricotta and Greek yogurt provide protein, while prosciutto adds additional protein and savory flavor. For a higher-protein version, use more Greek yogurt in the ricotta mixture or serve with eggs, grilled chicken, or a side of cottage cheese.

Plants Lead the Plate:
Peaches, basil, red onion, lemon, and chili bring color, freshness, antioxidants, and plant variety.

Healthy Fats:
Extra virgin olive oil adds richness and helps carry the flavor. Ricotta adds creaminess and satisfaction.

Steady Energy:
Using sourdough or whole-grain bread gives the dish more structure than refined white toast alone. Pairing bread with protein, fat, and fruit helps create a more balanced meal.

Reduce Harmful Inputs:
Prosciutto is flavorful but salty and processed, so use it as an accent rather than the main event. That is the MW&B approach: enjoy the flavor, keep the portion sensible, and let the real-food ingredients lead.

Flavor Is Compliance:
Sweet peaches, creamy ricotta, salty prosciutto, peppery basil, chili heat, lemon, and olive oil make this feel special without making it complicated.

MW&B Serving Suggestions

Serve with:

  • A simple arugula salad
  • Tomato and cucumber salad
  • Scrambled eggs
  • Grilled chicken
  • Lentil salad
  • Roasted vegetables
  • Greek yogurt on the side
  • A bowl of seasonal fruit

For a lighter plate, serve one toast with a large green salad.

For a more substantial meal, add eggs, grilled chicken, or white beans on the side.

Chef Mark’s Tip

Use ripe but firm peaches so they hold their shape when seared. Whip the ricotta with lemon zest and a little Greek yogurt to make it brighter and creamier. Keep the prosciutto light so it seasons the dish instead of taking over like it owns the plate.

Real food, real flavor, real life.
