with Green Peppercorn Herb Sauce, Cauliflower Mash & Roasted Carrots
Perfect for a Sunday lunch or family dinner.
This is comfort food with a cleaner MW&B backbone: golden pan-seared chicken, a lighter green peppercorn herb sauce, creamy cauliflower-potato mash, and roasted carrots for color and natural sweetness. It feels like a bistro plate, but it keeps the focus on real ingredients, protein, vegetables, healthy fats, and real flavor.
This fits the Midlife Wellness & Beyond recipe framework because it uses real food, includes meaningful protein, brings vegetables onto the plate, avoids added sugar, and uses herbs, peppercorns, mustard, garlic, and pan juices to build flavor. MW&B recipes are meant to support adults 45+ with food that is practical, balanced, and actually worth eating.

For the cauliflower-potato mash
- 1 medium head of cauliflower, cut into florets
- 1/2lb Yukon gold potatoes, peeled and chopped
- 2 tablespoons plain Greek yogurt
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, minced or roasted
- ½ teaspoon sea salt
- Black pepper, to taste

For the roasted carrots
- 1 lb carrots, peeled or scrubbed
- 1 tablespoon extra virgin olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- ½ teaspoon thyme leaves
- 1 teaspoon fresh lemon juice
Method
- Preheat the oven.
Preheat oven to 425°F. - Roast the carrots.
Place carrots on a baking sheet. Toss with olive oil, salt, pepper, and thyme. Roast for 25–30 minutes, turning once, until tender and lightly caramelized. Finish with lemon juice. - Cook the mash vegetables.
Add potatoes to a pot of salted water. Simmer for 10 minutes, then add cauliflower florets. Continue cooking for another 8–10 minutes, or until both are tender. - Make the cauliflower-potato mash.
Drain well. Mash with Greek yogurt, olive oil, garlic, salt, pepper, and parsley. Keep warm. - Season the chicken.
Pat chicken dry. Season with salt, pepper, garlic powder, smoked paprika, and thyme. - Sear the chicken.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side, depending on thickness, until golden and cooked through to 165°F. Remove and rest. - Start the sauce.
In the same pan, lower heat to medium. Add olive oil if needed, then add shallot and garlic. Cook for 1–2 minutes. - Build the pan sauce.
Add broth, wine or extra broth, Dijon mustard, and crushed green peppercorns. Scrape up the browned bits from the pan and simmer for 3–4 minutes. - Make it creamy.
Stir in half-and-half or light cream and simmer gently until slightly thickened. If using Greek yogurt, reduce the heat to low and stir it in gently so it does not split. - Finish the sauce.
Add parsley, thyme, lemon juice, and black pepper. Taste and adjust seasoning. - Plate.
Spoon cauliflower-potato mash onto each plate. Add chicken and roasted carrots. Spoon the green peppercorn herb sauce over the chicken.

Chef Mark’s Tip
For juicy chicken, let it rest for 5 minutes before slicing. Resting keeps the juices in the meat instead of letting them run all over the plate.
MW&B Serving Suggestion
Serve this as a complete dinner on its own, or add a simple arugula salad with lemon vinaigrette for more greens. For an even stronger MW&B plate, keep the sauce moderate, load up the carrots, and add extra steamed greens or roasted broccoli.
