Pan-Roasted Cod with Charred Lemon, Garlic & Green Beans

Real food. Real flavor. Real life.

This pan-roasted cod is light, flavorful, and simple enough for a weeknight dinner while still feeling polished enough to serve to family and friends. The cod is seared until golden, then finished with garlic, olive oil, lemon, parsley, and crisp-tender green beans.

It is the kind of meal that shows exactly what MW&B is about: quality protein, colorful plants, healthy fats, bright flavor, and food that supports the body without making dinner feel like a medical appointment.

Cook Time

Total Time

25–30 minutes

Ingredients

For the Cod

  • 4 cod fillets, about 5–6 oz each
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter, optional
  • 3 cloves garlic, lightly smashed
  • 1 lemon, halved
  • Sea salt
  • Freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • Optional: pinch of chili flakes

For the Green Beans

  • 1 lb green beans, trimmed
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • Sea salt
  • Freshly ground black pepper
  • 1 teaspoon fresh lemon juice

For Finishing

  • Extra parsley
  • Lemon wedges
  • Drizzle of extra virgin olive oil
  • Freshly cracked black pepper

Method

Pat the cod fillets dry with paper towels. Season both sides with salt and black pepper.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Place the lemon halves cut-side down in the pan and cook for 2–3 minutes, until deeply golden and charred. Remove and set aside.

In the same pan, add the cod fillets. Cook for 3–4 minutes on the first side, until golden.

Carefully turn the fish over. Add the smashed garlic and butter if using.

Cook for another 3–5 minutes, spooning the garlic oil or butter over the fish, until the cod flakes easily and reaches an internal temperature of 145°F.

Remove the cod from the pan and keep warm.

In a second skillet, heat olive oil over medium-high heat.

Add the green beans and cook for 5–7 minutes, stirring occasionally, until lightly blistered and tender-crisp.

Add the minced garlic and cook for 30 seconds.

Season with salt, black pepper, and lemon juice.

Plate the cod with the green beans.

Squeeze the charred lemon over the fish.

Finish with parsley, black pepper, and a light drizzle of olive oil.

Serve warm.

MW&B Why This Fits

Real Food First:
This recipe uses cod, green beans, garlic, lemon, parsley, olive oil, and simple seasoning. No bottled sauce, no processed coating, no culinary smoke machine required.

Build and Keep Muscle:
Cod is a lean source of high-quality protein, which supports muscle maintenance, repair, and satiety. In midlife, protein matters because muscle is not just about looking strong. It helps support strength, balance, independence, and daily function.

Plants Lead the Plate:
Green beans, garlic, lemon, and parsley bring color, fiber, freshness, and plant variety.

Healthy Fats:
Extra virgin olive oil adds flavor and helps cook both the fish and vegetables. A small amount of butter can add richness.

Steady Energy:
This is naturally lower in carbohydrates, so it works well as a lighter meal. For a more active-day plate, add roasted potatoes, quinoa, farro, brown rice, or lentils.

Reduce Harmful Inputs:
Cooking the cod simply at home lets you control sodium, fat, and portion size. There is no heavy breading, deep frying, or sugary glaze.

Flavor Is Compliance:
Garlic, charred lemon, parsley, olive oil, and black pepper bring big flavor without making the dish complicated. When healthy food tastes good, people are far more likely to repeat it.

MW&B Serving Suggestions

  • Farro
  • Lentils
  • Cucumber tomato salad
  • Arugula salad with lemon
  • Roasted asparagus
  • Sautéed spinach

For a more active-day meal, add roasted potatoes, quinoa, brown rice, lentils, or farro.

Chef Mark’s Tip

Dry the cod well before it goes into the pan. Moisture is the enemy of a good sear. Let the fish cook undisturbed on the first side so it can develop color, then turn it gently. Finish with charred lemon because the slight bitterness and sweetness lift the fish beautifully.

Real food, real flavor, real life.
