Paella

This seafood paella is colorful, satisfying, and built around real ingredients: seafood, rice, peppers, peas, tomatoes, herbs, lemon, olive oil, and warming spices. The shrimp, mussels, and fish bring lean protein, the peas and peppers add color and plant power, and the saffron-spiced rice gives the dish comfort without needing cream, butter, or a heavy sauce.

This fits the Midlife Wellness & Beyond recipe profile because it includes meaningful protein, plant-forward ingredients, healthy fats, practical flavor-building, and a balanced approach to comfort food. MW&B recipes are built around real food, protein, plants, healthy fats, fiber where possible, and meals people actually want to eat again and again.

Serves: 6
Prep time: 20 minutes
Cook time: 35–40 minutes
Total time: 1 hour

Ingredients

For the paella

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 1 red bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • 1½ cups short-grain rice, such as Arborio
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground turmeric
  • Pinch of saffron threads, soaked in 2 tablespoons warm water
  • ½ teaspoon sea salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 cup crushed tomatoes
  • 4 cups low-sodium seafood, chicken, or vegetable broth
  • ½ cup frozen peas
  • ¾ lb large shrimp, peeled and deveined
  • ¾ lb fish or scallops, cut into medium size chunks
    • cod, halibut, haddock, or sea bass work well
  • 1 lb mussels, cleaned and debearded
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Optional flavor boosters

  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon lemon zest
  • ½ cup roasted red peppers, sliced
  • 1 tablespoon capers
  • Extra parsley to finish

Method

  1. Prepare the saffron.
Place the saffron threads in 2 tablespoons of warm water and let them bloom for 5–10 minutes.
  2. Start the vegetables.
Heat olive oil in a large wide skillet or paella pan over medium heat. Add onion and red bell pepper. Cook for 5–6 minutes, until softened.
  3. Add garlic and spices.
Stir in garlic, smoked paprika, turmeric, salt, pepper, and red pepper flakes if using. Cook for 30 seconds until fragrant.
  4. Toast the rice.
Add the rice and stir for 1–2 minutes so it gets coated in the oil and spices. This helps build flavor and texture.
  5. Add tomatoes and broth.
Stir in crushed tomatoes, broth, and saffron water. Bring to a gentle simmer.
  6. Cook the rice.
Reduce heat to medium-low and cook uncovered for 18–22 minutes. Do not stir constantly, just a little every now and again.
  7. Add seafood and peas.
Scatter the peas over the rice. Nestle the shrimp, fish or scallops, and mussels into the pan. Cover loosely with foil or a lid and cook for 8–10 minutes, until the shrimp are pink, the fish is cooked through, and the mussels have opened.
  8. Discard unopened mussels.
Any mussels that do not open after cooking should be discarded.
  9. Rest the paella.
Remove from heat and let the paella rest for 5 minutes.
  10. Finish and serve.
Sprinkle with parsley, lemon zest if using, and serve with lemon wedges.

MW&B Why This Fits

Real Food First:
This recipe uses seafood, rice, tomatoes, peppers, peas, garlic, herbs, lemon, saffron, and olive oil. Real ingredients, no mystery packets pretending to be culture.

Build and Keep Muscle:
Shrimp, mussels, and white fish provide lean protein, making this a strong meal for supporting muscle maintenance and satiety.

Plants Lead the Plate:
Peppers, tomatoes, peas, garlic, parsley, and lemon add color, flavor, and plant variety.

Healthy Fats:
Extra virgin olive oil adds satisfying unsaturated fat and helps carry the spices and aromatics.

Steady Energy:
Rice provides carbohydrates for energy, while seafood adds protein and vegetables add fiber and balance.

Flavor Is Compliance:
Saffron, smoked paprika, garlic, tomato, lemon, parsley, and seafood create a dish that feels special without relying on heavy sauces or fried ingredients.

Chef Mark’s Tip

Once the broth goes in, resist the urge to stir constantly. Letting the rice cook undisturbed helps develop better texture and gives the bottom a chance to form a little golden crust, known as socarrat. That crispy layer is flavor, not a mistake.

MW&B Serving Suggestion

Serve this with a simple arugula salad with lemon vinaigrette or roasted asparagus. For a lighter plate, keep the serving moderate and add extra greens. For a heartier meal, pair it with a tomato-cucumber salad and grilled vegetables.
