Orange, Asparagus, Radicchio & Shaved Vegetable Salad

With Mustard Seed Citrus Dressing

This salad is fresh, sharp, crunchy, colorful, and full of texture. The orange segments bring sweetness, the red onion brings bite, the celery keeps it crisp, and the radicchio adds that slightly bitter edge that makes the whole dish feel more grown-up and less like a bowl of limp salad leaves.

It fits the Midlife Wellness & Beyond style because it is built from real whole foods, loaded with plants, naturally high in fiber, and bright enough to make vegetables feel like something you actually want to eat.

Serves

4

Ingredients

For the salad

1 bunch asparagus, woody ends removed
2 medium carrots, shaved or very thinly sliced
2 cups radicchio lettuce, thinly sliced
2 celery stalks, thinly sliced on an angle
1/2 small red onion, very thinly sliced into rings
2 oranges, peeled and cut into segments
1 small handful fresh parsley, mint, or basil, torn

For the mustard seed citrus dressing

3 tablespoons extra virgin olive oil
1 tablespoon whole mustard seeds
2 teaspoons Dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons fresh orange juice
1 teaspoon honey
Salt and black pepper, to taste

Method

Bring a small pan of water to a boil. Add the asparagus and cook for 60 to 90 seconds, just until bright green and slightly tender. Drain and place into cold water to stop the cooking. Dry well, then cut into 2-inch pieces.

Place the carrots, radicchio, celery, red onion, orange segments, herbs, and asparagus into a large bowl.

In a small bowl, whisk together the olive oil, mustard seeds, Dijon mustard, apple cider vinegar, orange juice, honey, salt, and black pepper.

Pour the dressing over the salad and gently toss until everything is lightly coated.

Taste and adjust with a little more salt, pepper, vinegar, or orange juice if needed.

Serve straight away while the vegetables are crisp and fresh.

Chef’s Notes

For a more elegant plate, build the salad in the center of a wide shallow bowl like the photo. Keep the vegetables piled high rather than spread flat. Finish with a few extra orange segments, onion rings, mustard seeds, and herbs on top.

For a more filling meal, add grilled salmon, shrimp, chicken, lentils, chickpeas, or toasted almonds.

Why This Fits the Midlife Wellness & Beyond Lifestyle

This recipe supports the MW&B pillar of Real Food First. Every main ingredient is a whole food: vegetables, fruit, herbs, olive oil, citrus, and mustard seeds.

It also supports Gut Health and Digestive Support because it brings in fiber from asparagus, carrots, celery, red onion, oranges, and radicchio. Fiber helps support digestion, fullness, and a healthier overall eating pattern.

Radicchio also brings bitterness, color, and polyphenol-rich plant compounds, making the salad feel more balanced and more interesting than a standard side salad, which is nice because midlife deserves better than sad lettuce.

It fits Reduce Harmful Inputs because there is no added junk, no fried food, no ultra-processed dressing, and no heavy sugar-loaded sauce. The sweetness comes mostly from the oranges, with just a small touch of honey to balance the vinegar and mustard.

It also fits Assessment and Adjustment because this salad can be adjusted easily. Need more protein? Add salmon, shrimp, chicken, lentils, or chickpeas. Need more calories? Add avocado, nuts, seeds, or extra olive oil. Need it lighter? Use less dressing.

This is the kind of food MW&B is built around: colorful, simple, nutrient-dense, satisfying, and made from ingredients the body recognizes.
