One-Pan Roasted Chicken Thighs with Potatoes, Carrots, Cauliflower & Red Onion

Simple food. Big flavor. Very little fuss.

This is exactly the kind of meal I love to cook. You put good ingredients on one tray, season them properly, roast them well, and let the oven do the work.

You get juicy chicken, caramelized vegetables, plenty of flavor, and a meal that feels comforting without being heavy. It is simple, reliable, and the sort of dinner you can come back to again and again.

That, for me, is what MW&B is all about. Real food, cooked well, that helps you eat better without making life more complicated.

Total Time

About 1 hour

Ingredients

For the Chicken and Vegetables

  • 4 bone-in, skin-on chicken thighs
  • 3 medium potatoes, cut into chunks
  • 3 large carrots, peeled and cut into thick pieces
  • 1 small cauliflower, broken into florets
  • 1 large red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon whole grain mustard
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt
  • Black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley, for finishing

Optional Extra Finish

  • A small drizzle of honey
  • A squeeze of fresh lemon
  • Extra parsley

Method

Preheat the oven to 425°F.

In a large bowl, mix the olive oil, whole grain mustard, Dijon mustard, garlic, smoked paprika, thyme, oregano, cumin, a good pinch of salt, black pepper, and lemon juice.

Add the chicken thighs and toss well so they are nicely coated.

Place the potatoes, carrots, cauliflower, and red onion on a large sheet pan or roasting tray. Drizzle with a little extra olive oil, season with salt and pepper, and toss.

Nestle the chicken thighs on top of the vegetables.

Roast for 40 to 45 minutes, turning the vegetables once during cooking, until the chicken is deeply golden, the skin is crisp, and the vegetables are tender and caramelized.

If you want a little more color, place the tray under the broiler for 2 to 3 minutes at the end, keeping a close eye on it.

Finish with chopped parsley and, if you like, a small squeeze of lemon or a light drizzle of honey.

Serve straight from the tray.

Why This Works

You have protein from the chicken, fiber and color from the vegetables, and enough starch from the potatoes to make the meal satisfying.

The red onion softens and sweetens in the oven. The cauliflower picks up great roasted flavor. The carrots bring natural sweetness. The mustard, garlic, and herbs give the chicken real character without needing anything fancy.

It is a proper meal. Filling, balanced, and full of flavor.

Why I Like This Dish for MW&B

This is not “diet food.” It is just good food.

It gives you:

  • Quality protein to support muscle and healthy aging
  • Colorful vegetables for fiber, vitamins, and variety
  • A simple cooking method that works on a busy night
  • One-pan ease, which means less mess and a better chance you will actually make it again

That last part matters more than people think. The best healthy meal is not the most complicated one. It is the one you will cook more than once.

Chef Mark’s Tip

Do not overcrowd the tray. If everything is packed too tightly, the vegetables steam instead of roast. Give them space and let the edges color properly. That is where the flavor is.

And season confidently. Chicken and vegetables need help. Salt, pepper, herbs, garlic, and good roasting make all the difference.
