Why Midlife Wellness & Beyond Approved
This dish delivers lean protein from cod, supportive fats from olive oil and olives, and antioxidant-rich vegetables in one simple tray. It’s low in saturated fat, high in omega-3s, and built around ingredients that support vascular health, brain function, and long-term metabolic resilience.
Ingredients
- 2 cod fillets (about 6 oz / 170 g each)
- 2 cups fresh spinach, loosely packed
- 1½ cups cherry tomatoes, halved
- ¼ cup pitted Kalamata or green olives, sliced
- ½ small red onion, thinly sliced
- 2 cloves garlic, minced
- 1½ Tbsp olive oil
- 1 tsp dried oregano (or 1 Tbsp fresh leaves)
- Juice of ½ lemon (plus extra wedges for serving)
- Sea salt and cracked black pepper, to taste
- Optional garnish: Fresh parsley or basil leaves
Instructions
- Preheat the Oven
Preheat oven to 400°F (200°C). Lightly oil or line a small baking dish with parchment. - Build the Spinach Base
Spread the spinach in an even layer on the bottom of the baking dish. This will wilt slightly and soak up the juices as the fish bakes. - Assemble the Pan
Place the cod fillets on top of the spinach. Scatter the cherry tomatoes, sliced olives, and red onion around and over the fish. Sprinkle the minced garlic and oregano evenly over everything. - Season & Dress
Drizzle the olive oil and lemon juice over the cod and vegetables. Season lightly with sea salt and cracked black pepper. - Bake
Bake uncovered for 15–18 minutes, or until the cod flakes easily with a fork and the tomatoes have softened into a light sauce. Thicker fillets may need an extra minute or two. - Finish & Serve
Garnish with fresh parsley or basil and an extra squeeze of lemon for brightness. Serve warm, scooping some of the wilted spinach and vegetables onto each plate. Pair with quinoa, farro, or roasted vegetables if you want a more substantial meal.
