Ingredients
For the Eggplant
- 2 medium eggplants, sliced lengthwise into ½-inch slices
- 2 tablespoons extra virgin olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
For the Whipped Ricotta
- 1½ cups whole milk ricotta cheese
- ¼ cup plain Greek yogurt
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
For Finishing
- 2 teaspoons chili crisp or chili oil
- 2 scallions, thinly sliced
- 1 tablespoon fresh thyme, oregano, or basil leaves
- 1 teaspoon sesame seeds, optional
- Extra black pepper
Method
- Place the eggplant slices on a tray and sprinkle lightly with salt. Let sit for 10 minutes, then pat dry with paper towels. This helps remove excess moisture and improves texture.
- Brush the eggplant with olive oil and season with smoked paprika, garlic powder, sea salt, and black pepper.
- Heat a grill pan or outdoor grill over medium-high heat. Grill the eggplant for 4 to 5 minutes per side, until tender, lightly charred, and golden.
- In a food processor or blender, combine ricotta, Greek yogurt, lemon zest, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.
- Spoon the whipped ricotta onto a serving plate. Arrange the grilled eggplant over the top.
- Finish with chili oil, sliced scallions, fresh herbs, sesame seeds if using, and extra black pepper.
