Ingredients
For the grilled chicken
- 1½ lbs boneless, skinless chicken thighs or chicken breasts
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes, optional
For the green herb sauce
- 1 cup fresh cilantro
- ½ cup fresh parsley
- ½ avocado or ½ cup plain Greek yogurt
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 small garlic clove
- 1 tablespoon water, plus more as needed
- ½ teaspoon sea salt
- Black pepper, to taste
- Optional: 1 small jalapeño, seeds removed for less heat
For serving
- 2 cups cooked jasmine rice, brown rice, or quinoa
- Lime wedges
- Extra cilantro
- Sliced avocado, optional
- Cucumber or tomato salad, optional
Method
- Marinate the chicken.
In a bowl, whisk together olive oil, lime juice, lime zest, garlic, smoked paprika, cumin, oregano, salt, pepper, and red pepper flakes if using. Add the chicken and toss well. Marinate for 30 minutes, or up to 4 hours in the refrigerator. - Make the green herb sauce.
Add cilantro, parsley, avocado or Greek yogurt, olive oil, lime juice, garlic, water, salt, pepper, and jalapeño if using to a blender or food processor. Blend until smooth. Add more water one tablespoon at a time until it is pourable. - Cook the rice.
Prepare rice, brown rice, or quinoa according to package directions. Keep warm. - Grill the chicken.
Heat a grill or grill pan over medium-high heat. Grill the chicken for 5–6 minutes per side, depending on thickness, until nicely charred and cooked through to 165°F. - Rest the chicken.
Let the chicken rest for 5 minutes before slicing. Annoying, yes. But so is dry chicken, and we are trying to remain civilized. - Plate the bowl.
Spoon the rice into bowls. Add grilled chicken and drizzle generously with the green herb sauce. - Finish.
Add extra cilantro, lime wedges, and sliced avocado or cucumber salad if using.
MW&B Why This Fits
Real Food First:
This recipe uses chicken, herbs, lime, garlic, olive oil, rice, avocado or Greek yogurt, and simple spices.
Build and Keep Muscle:
Chicken provides a strong source of protein, which supports muscle maintenance, recovery, and satiety in midlife.
Plants Lead the Plate:
Cilantro, parsley, lime, garlic, optional jalapeño, avocado, and any added salad bring color, freshness, and plant variety.
Steady Energy:
Rice or quinoa adds carbohydrates for energy, while chicken, olive oil, and avocado or Greek yogurt help balance the meal.
Healthy Fats:
Extra virgin olive oil and avocado add satisfying fats. If using Greek yogurt, the sauce stays creamy while adding extra protein.
Flavor Is Compliance:
Lime, garlic, cumin, smoked paprika, herbs, and char from the grill make this meal bright, smoky, and satisfying without needing heavy sauces or sugary marinades.

Chef Mark’s Tip
Use chicken thighs for the juiciest result and chicken breast for the leanest version. Either way, let the chicken rest before slicing so the juices stay in the meat instead of escaping onto the cutting board like they had other plans.
MW&B Serving Suggestion
For the strongest MW&B plate, serve this with quinoa or brown rice, cucumber tomato salad, and extra greens. That gives you protein, plants, fiber, healthy fats, and enough flavor to keep dinner from becoming another beige obligation.
