with Spicy Peanut Lime Sauce, Cilantro & Crushed Peanuts
These grilled chicken satay skewers are bold, smoky, nutty, and full of flavor without needing a heavy sauce or deep-fried garnish or side. The chicken brings lean protein, the peanut lime sauce adds healthy fats and richness, and the cilantro, lime, ginger, garlic, and chili keep everything bright and balanced.
This fits the Midlife Wellness & Beyond recipe framework because it uses real ingredients, includes meaningful protein, supports a balanced plate, and builds flavor with herbs, spices, citrus, healthy fats, and simple cooking techniques. MW&B recipes are meant to be practical, chef-led, protein-focused, plant-forward where possible, and enjoyable enough to repeat and make over time and time again without getting bored.

For the spicy peanut lime sauce
- ½ cup natural peanut butter
- 2 tablespoons lime juice
- 1 tablespoon low-sodium tamari or soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon honey or maple syrup
- 1 garlic clove, finely grated

To finish
- 2 tablespoons chopped peanuts
- 2 tablespoons fresh cilantro, chopped
- Lime wedges
- Pinch of red pepper flakes, optional
Method
- Soak the skewers.
If using wooden skewers, soak them in water for at least 30 minutes before grilling. This prevents them from burning too quickly. - Marinate the chicken.
In a bowl, whisk together oil, lime juice, tamari, Greek yogurt, garlic, ginger, curry powder, smoked paprika, cumin, red pepper flakes, salt, and black pepper. Add chicken and toss well. Marinate for 30 minutes, or up to 4 hours in the refrigerator. - Make the peanut sauce.
In a bowl, whisk together peanut butter, lime juice, tamari, sesame oil, honey or maple syrup, garlic, ginger, chili garlic sauce, and warm water. Add more water, one tablespoon at a time, until smooth and spoonable. - Thread the skewers.
Place the marinated chicken pieces onto skewers, leaving a little space between each piece so they cook evenly. - Grill the chicken.
Heat a grill or grill pan over medium-high heat. Grill the skewers for 10–12 minutes, turning every few minutes, until charred in spots and cooked through to 165°F. - Plate the dish.
Spoon the peanut lime sauce onto a serving plate. Place the grilled chicken skewers over the sauce. - Finish.
Top with chopped peanuts, cilantro, red pepper flakes if using, and fresh lime wedges.

Use chicken thighs if you want the juiciest skewers and chicken breast if you want the leanest version. Either way, cut the chicken pieces the same size so they cook evenly.
MW&B Serving Suggestion
Serve with:
- Cucumber and carrot salad
- Brown rice or quinoa
- Grilled bok choy
- Roasted broccoli
- Cabbage slaw with lime and cilantro
- Lettuce cups for a lighter option
For the strongest MW&B plate, serve the skewers with quinoa, cucumber-carrot slaw, and extra lime. That gives you protein, plants, fiber, healthy fats, and enough flavor to keep your “healthy dinner” enjoyable.
