Grilled Chicken Satay Rice Bowl

with Peanut Lime Sauce, Cabbage, Carrots, Cucumber & Avocado

This bowl brings together grilled chicken, rice, crunchy vegetables, avocado, sesame, scallions, and a creamy peanut lime sauce. It is colorful, satisfying, and built around the MW&B sweet spot: protein, plants, healthy fats, flavor, and enough texture to make lunch feel like something you actually chose.

This fits the Midlife Wellness & Beyond recipe framework because it uses real ingredients, includes meaningful protein, leads with colorful plants, balances carbohydrates with fat and protein, and keeps flavor strong without relying on ultra-processed shortcuts. MW&B recipes are designed to support adults 45+ with food that helps with strength, energy, satiety, and enjoyment.

Serves: 4
Prep time: 20 minutes
Marinade time: 30 minutes
Cook time: 15 minutes
Total time: About 1 hour 5 minutes

Ingredients

For the chicken

  • 1½ lbs boneless, skinless chicken breast or thighs, cut into bite-size pieces
  • 1 tablespoon extra virgin olive oil or avocado oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon low-sodium tamari or soy sauce
  • 1 tablespoon plain Greek yogurt
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon curry powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes, optional

For the peanut lime sauce

  • ½ cup natural peanut butter
  • 2 tablespoons fresh lime juice
  • 1 tablespoon low-sodium tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove, finely grated
  • 1 teaspoon fresh ginger, grated
  • 1–2 teaspoons chili garlic sauce or sriracha
  • ¼ cup warm water, plus more as needed

For the bowls

  • 2 cups cooked jasmine rice, brown rice, or quinoa
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cucumber, thinly sliced
  • 1 avocado, sliced
  • 2 scallions, sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons fresh cilantro, chopped
  • Lime wedges, for serving

Method

  1. Marinate the chicken.
In a bowl, whisk together oil, lime juice, tamari, Greek yogurt, garlic, ginger, curry powder, smoked paprika, cumin, salt, pepper, and red pepper flakes if using. Add the chicken and toss well. Marinate for 30 minutes, or up to 4 hours in the refrigerator.
  2. Make the peanut lime sauce.
In a small bowl, whisk together peanut butter, lime juice, tamari, sesame oil, honey or maple syrup, garlic, ginger, chili garlic sauce, and warm water. Add more water one tablespoon at a time until the sauce is smooth and pourable.
  3. Cook the chicken.
Heat a grill pan, skillet, or outdoor grill over medium-high heat. Cook the chicken for 10–12 minutes, turning occasionally, until browned and cooked through to 165°F.
  4. Prepare the vegetables.
While the chicken cooks, slice the cucumber, shred the cabbage and carrots, slice the avocado, and chop the cilantro.
  5. Build the bowls.
Divide the rice, brown rice, or quinoa among four bowls. Add grilled chicken, red cabbage, carrots, cucumber, and avocado.
  6. Finish.
Drizzle with peanut lime sauce. Top with scallions, sesame seeds, cilantro, and a squeeze of fresh lime.

MW&B Why This Fits

Real Food First:
This bowl uses chicken, rice or quinoa, cabbage, carrots, cucumber, avocado, lime, garlic, ginger, peanuts, sesame, herbs, and simple spices.

Build and Keep Muscle:
Chicken provides a strong source of protein, which supports muscle maintenance, recovery, and satiety in midlife.

Plants Lead the Plate:
Red cabbage, carrots, cucumber, avocado, scallions, cilantro, garlic, ginger, and lime bring color, crunch, freshness, and plant variety.

Steady Energy:
Rice or quinoa provides carbohydrates for energy, while chicken, peanut sauce, and avocado help balance the bowl with protein and healthy fats.

Healthy Fats:
Peanut butter, sesame oil, and avocado add satisfying fats that help the bowl feel complete.

Flavor Is Compliance:
Lime, ginger, garlic, curry spices, chili, cilantro, sesame, and peanut sauce make this bright, rich, and satisfying.

Chef Mark’s Tip

Keep the vegetables raw and crisp for contrast. The warm grilled chicken, creamy peanut sauce, cool cucumber, crunchy cabbage, and soft avocado all work because the textures are different.

MW&B Serving Suggestion

For the strongest MW&B plate, use brown rice or quinoa, add extra cabbage and cucumber, and keep the peanut sauce to a few tablespoons per bowl. That gives you protein, plants, fiber, healthy fats, and a meal that feels fresh, filling, and actually worth repeating.
