Creamy Mushroom & Onion Soup

Real food. Real flavor. Real life.

This creamy mushroom and onion soup is warm, earthy, and comforting without needing to be heavy. Mushrooms bring deep savory flavor, onions add natural sweetness, and a small amount of Greek yogurt or light cream gives the soup a smooth finish.

It is simple food made with real ingredients, which is exactly where MW&B lives. No canned soup shortcut, no mystery thickeners, no ingredient list that reads like a science lab breakdown.

Total Time

40 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • Cremini, baby bella, button, or a mix work well
  • 1 teaspoon fresh thyme leaves, plus extra to garnish
  • ½ teaspoon smoked paprika, optional
  • 1 tablespoon flour, or cornstarch for gluten-free
  • 4 cups low-sodium mushroom stock, vegetable stock or chicken stock
  • ½ cup plain Greek yogurt, light cream, or half-and-half
  • 1 teaspoon Dijon mustard
  • Sea salt
  • Freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped, optional

Method

Heat the olive oil in a large pot over medium heat.

Add the sliced onion and cook for 8–10 minutes, stirring often, until soft and lightly golden.

Add the garlic and cook for 30 seconds.

Add the mushrooms, thyme, smoked paprika if using, salt, and black pepper.

Cook for 10–12 minutes, stirring occasionally, until the mushrooms release their liquid and begin to brown.

Sprinkle in the flour and stir well for 1 minute.

Slowly pour in the mushroom stock, scraping the bottom of the pot as you stir.

Bring to a gentle simmer and cook for 12–15 minutes, until the soup slightly thickens.

Reduce the heat to low.

Stir in the Greek yogurt, light cream, or half-and-half. Do not boil if using Greek yogurt.

Add the Dijon mustard and stir until smooth.

Taste and adjust the seasoning with salt and pepper.

For a smoother soup, blend half of the soup and stir it back in. For more texture, leave it chunky.

Serve warm with fresh thyme or parsley on top.

MW&B Why This Fits

Real Food First:
This soup is made with mushrooms, onions, garlic, herbs, olive oil, stock, and a simple creamy finish. It is real food, not canned cream soup.

Plant-Forward:
Mushrooms and onions do most of the work here. They bring flavor, texture, and nutrients without needing loads of cream or cheese.

Gut Health and Fiber:
Mushrooms and onions contain fiber and plant compounds that support a more diverse, plant-forward eating pattern. Add white beans, lentils, or a side salad if you want even more fiber.

Healthy Fats:
Extra virgin olive oil adds richness and helps cook the vegetables without relying on heavy amounts of butter.

Protein Support:
Greek yogurt adds a small protein boost while keeping the soup creamy. To make it higher protein, serve with grilled chicken, white beans, lentils, or a boiled egg on the side.

Reduce Harmful Inputs:
This homemade version avoids ultra-processed canned soups, excess sodium, added sugar, artificial flavors, and unnecessary preservatives.

Comfort Still Counts:
Food does not need to be plain to be healthy. A warm, creamy mushroom soup can be satisfying, comforting, and still fit into a balanced midlife lifestyle.

MW&B Serving Suggestions

Serve with:

  • A side salad with lemon and olive oil
  • Roasted chicken
  • White beans stirred into the soup
  • Lentils for extra fiber and protein
  • Sourdough toast
  • Roasted vegetables
  • A small serving of whole-grain bread

For a lighter version, use Greek yogurt and low-sodium stock.

For a richer version, use light cream or half-and-half, but keep the portion sensible.

Chef Mark’s Tip

Let the mushrooms brown properly before adding the stock. That is where the deep flavor comes from. If you rush this step, the soup will still be soup, but it will be the kind that looks you in the eye and apologizes.

Real food, real flavor, real life.
