Creamy Chickpeas with Spinach & Sun-Dried Tomatoes

Real food. Real flavor. Real life.

This creamy chickpea dish is rich, warming, and full of flavor, but it is still built around simple, real ingredients. Chickpeas bring fiber and plant-based protein, spinach adds greens, sun-dried tomatoes bring depth and sweetness, and garlic, olive oil, herbs, and chili flakes make the whole bowl taste satisfying without needing a heavy sauce.

It works as a hearty lunch, a meatless dinner, or a side dish alongside grilled chicken, fish, shrimp, or roasted vegetables. It fits the MW&B lifestyle because it supports steady energy, gut health, plant diversity, and real-food cooking.

The MW&B recipe framework focuses on real food, meaningful protein, plants leading the plate, fiber, healthy fats, low added sugar, and flavor that makes healthy eating repeatable.

Total Time

30 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, sliced
  • 2 cans chickpeas, drained and rinsed
  • 1 cup low-sodium vegetable stock
  • ½ cup light coconut milk, Greek yogurt, or a splash of cream
  • 3 cups fresh spinach
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ¼ teaspoon chili flakes, optional
  • 1 tablespoon fresh lemon juice
  • Sea salt
  • Freshly ground black pepper

To Finish

  • Fresh parsley or basil, chopped
  • Extra black pepper
  • Small drizzle of extra virgin olive oil
  • Optional: grated Parmesan or crumbled feta

Method

Heat a large sauté pan over medium heat. Add the olive oil.

Add the onion and cook for 4–5 minutes, stirring occasionally, until softened.

Add the garlic, sun-dried tomatoes, oregano, smoked paprika, chili flakes if using, salt, and black pepper. Cook for 1 minute, just until fragrant.

Add the chickpeas and vegetable stock. Bring to a gentle simmer.

Cook for 8–10 minutes, allowing the chickpeas to soften and the flavors to come together.

Using the back of a spoon, lightly mash some of the chickpeas into the broth. This helps create a creamy texture without needing much cream.

Stir in the coconut milk, Greek yogurt, or cream. If using Greek yogurt, lower the heat first so it does not split.

Add the spinach and cook for 2–3 minutes, until wilted.

Finish with lemon juice. Taste and adjust with more pepper, lemon, or a small pinch of salt if needed.

Spoon into bowls and top with fresh herbs, olive oil, and Parmesan or feta if using.

Serve warm.

MW&B Why This Fits

Real Food First:
This recipe uses chickpeas, spinach, onions, garlic, sun-dried tomatoes, herbs, olive oil, and lemon. It is made from recognizable ingredients, not a shelf-stable sauce pouch pretending to be Mediterranean.

Plants Lead the Plate:
Chickpeas, spinach, onion, garlic, tomatoes, herbs, and lemon bring plant variety, color, texture, and flavor.

Gut Health:
Chickpeas are rich in fiber, which supports digestion, fullness, and gut health. Spinach and onions add even more plant compounds and prebiotic-style support.

Steady Energy:
The chickpeas provide slow-digesting carbohydrates, fiber, and some protein. Paired with olive oil and greens, this creates a satisfying meal that does not feel heavy.

Healthy Fats:
Extra virgin olive oil adds richness and flavor. If you use light coconut milk, Greek yogurt, or a small amount of cream, the dish stays creamy while still being balanced.

Build and Keep Muscle:
As written, this is a good plant-forward dish, but it is not as protein-rich as a fish, chicken, egg, or Greek-yogurt-based meal. For a stronger MW&B main course, add grilled chicken, shrimp, salmon, tofu, or serve with Greek yogurt on the side.

Reduce Harmful Inputs:
This dish has no added sugar and avoids ultra-processed ingredients. The main thing to watch is sodium from sun-dried tomatoes, canned chickpeas, and cheese if added.

Flavor Is Compliance:
Garlic, sun-dried tomatoes, smoked paprika, chili, lemon, and herbs make this bowl bold and satisfying. That matters because food only works if people want to eat it again.

Higher-Protein MW&B Options

To make this a more complete protein-focused meal, add one of the following:

  • Grilled chicken breast
  • Shrimp
  • Salmon
  • Cod
  • Turkey meatballs
  • Tofu or tempeh
  • A spoonful of Greek yogurt
  • A fried or poached egg

MW&B Serving Suggestion

Serve with:

  • Roasted broccoli or cauliflower
  • A simple arugula salad
  • Farro, quinoa, or brown rice
  • Toasted sourdough
  • Grilled fish or chicken
  • Roasted sweet potatoes

Chef Mark’s Tip

Mash a small portion of the chickpeas into the sauce as it simmers. This naturally thickens the dish and gives it a creamy texture without needing a lot of cream. Add the spinach at the end so it stays bright and fresh.

Real food, real flavor, real life.
