Serves

Ingredients
- 1 pink grapefruit, peeled and cut into thick chunks or slices
- 2 small oranges, peeled and cut into thick chunks or slices
- 1 cup pomegranate seeds
- ½ cup baby yellow tomatoes, cut in half
- 1 lime, juice and zest
- 2 tablespoons citrus juice, saved from the grapefruit or oranges when cutting
- 1 avocado, stone removed and flesh cut into chunks

Method
- Place the chopped grapefruit, oranges, pomegranate seeds, and baby yellow tomatoes into a large salad bowl.
- In a small bowl, add the saved citrus juice and the lime juice.
- Add the avocado chunks to the citrus juice and carefully spoon the juice over the avocado. This helps keep the avocado from discoloring.
- Carefully add the avocado chunks to the citrus fruit.
- Scatter over the crushed pistachio nuts.
- In a small bowl, whisk together the Greek yogurt, lime zest, and chopped tarragon leaves.
- Serve the tarragon yogurt dressing on the side or drizzle it over the citrus salad just before serving.

Real Food First
This recipe is made with whole fruit, avocado, tomatoes, pistachios, Greek yogurt, lime, and fresh tarragon. It is colorful, fresh, and built from real ingredients, not processed fruit cups floating in syrup.
Plant Diversity
This salad includes grapefruit, oranges, pomegranate, tomatoes, avocado, lime, pistachios, and tarragon. That variety matters. Different plants bring different fibers, antioxidants, flavors, and textures.
Gut Health and Digestive Support
The citrus, pomegranate, tomatoes, avocado, and pistachios all add fiber and plant compounds. Greek yogurt may also support gut health when it contains live and active cultures.
Healthy Fats
Avocado and pistachios provide unsaturated fats, helping the salad feel more satisfying than a basic fruit bowl. This is especially helpful if serving it for breakfast, brunch, or as part of a lighter lunch.
Reduce Harmful Inputs
There is no added sugar in this recipe. The sweetness comes naturally from fruit, and the dressing is made with Greek yogurt and herbs instead of bottled sweet dressings.
Build and Keep Muscle
Greek yogurt adds protein, which helps make this more balanced than fruit alone. To make it higher in protein, serve it with extra yogurt, eggs, cottage cheese, salmon, chicken, or another protein-rich food.
Assessment and Adjustment
This recipe is easy to adjust. Use more yogurt for extra protein, more pistachios for crunch and healthy fat, or extra lime if you want more brightness. If grapefruit is too sharp, use blood orange or mandarins instead.
Purpose, Connection, and Community
This is a beautiful recipe for brunch, Mother’s Day, Father’s Day, Easter, spring gatherings, or wellness events. It looks special but is simple to prepare, and delicious to eat.

Chef Mark Note
This salad is all about balance. The grapefruit brings sharpness, the oranges add sweetness, the pomegranate gives crunch, the tomatoes add freshness, and the avocado brings creaminess. The pistachios add texture, and the tarragon yogurt gives the whole dish a clean, herby finish.
It works well for brunch, as a starter, or as a refreshing side dish with grilled fish, chicken, or shrimp. Real food, bright flavor, simple execution.
