Charred Eggplant with Blistered Tomatoes, Garlic, Thyme & Olive Oil

This is a simple Mediterranean-style vegetable dish that lets the ingredients do the work. The eggplant is grilled or roasted until soft and smoky, the tomatoes blister and release their juices, and the garlic, thyme, olive oil, and black pepper bring the whole bowl together. It is not complicated to produce beautiful tasting meals with real food.

Serves: 4 as a side
Prep time: 10 minutes
Cook time: 25–30 minutes
Total time: 40 minutes

Ingredients

  • 2 medium eggplants, sliced lengthwise into thick wedges or halves
  • 2 cups cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 1 tbsp fresh thyme leaves, plus extra sprigs to finish
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • ½ tsp sea salt
  • ½ tsp cracked black pepper
  • Optional: pinch of chili flakes

Method

  1. Prepare the eggplant.
Slice the eggplant lengthwise. Score the flesh lightly with a knife so the oil, garlic, and herbs can work their way in.
  2. Season well.
Place the eggplant and tomatoes in a bowl. Add olive oil, garlic, thyme, lemon zest, salt, pepper, and chili flakes if using. Toss gently.
  3. Roast or grill.
Roast at 425°F for 25–30 minutes, or grill over medium-high heat until the eggplant is tender, lightly charred, and golden. The tomatoes should be blistered and just starting to collapse.
  4. Finish fresh.
Add lemon juice just before serving. Finish with a few thyme sprigs and another crack of black pepper.
  5. Serve warm or room temperature.
This dish works well on its own as a side, over lentils, with grilled fish, or alongside chicken.

Why This Fits MW&B

Real Food First: Eggplant, tomatoes, garlic, herbs, lemon, and olive oil. Nothing fake. Nothing pretending to be food when it’s not.

Plants Lead the Plate: This dish is built entirely around vegetables, herbs, and healthy fat.

Fiber Support: Eggplant and tomatoes bring fiber, which helps support digestion, fullness, and steady energy.

Healthy Fats: Extra virgin olive oil adds flavor and helps carry the garlic, herbs, and roasted tomato juices.

Low Added Sugar: No added sugar. The sweetness comes naturally from the tomatoes and roasted eggplant.

Flavor Without Heavy Sauces: Char, garlic, lemon, herbs, and olive oil give you plenty of flavor without cream, butter-heavy sauces, or processed shortcuts.

MW&B Note: This is a strong side dish, not a complete meal by itself. For a proper MW&B plate, pair it with a protein like grilled salmon, shrimp, chicken, eggs, lentils, or Greek yogurt with herbs.

Chef Mark’s Tip

Eggplant needs enough heat to soften and caramelize. Cook it too low and it turns spongy. Cook it hot and give it space on the pan so it roasts instead of steams. That is the difference between a beautiful vegetable dish and something that comes out of a cardboard box.

MW&B Serving Suggestion

Serve with grilled salmon and a spoonful of Greek yogurt mixed with lemon, garlic, and herbs. That gives you protein, healthy fat, fiber, and big flavor on one plate.
