Orange, Jicama & Avocado Salad
When you crave fresh crisp flavor nothing beats a good salad. You take the right ingredients, mix them together, add a zesty dressing and the combinations shout out to your taste buds – devour me! However when we eat out, salads are normally iceberg lettuce, tomatoes, cucumber, a few croutons thrown on top with a thick creamy heart clogging dressing. But at home making a salad can be a wonderful thing because you get to use your imagination and come up with your own magical combinations of healthy ingredients that you like, and you know what – there are no rules.
When you’re at the farmers market or your local food store, try something new, pick a fruit or vegetable you have looked at before, but never tried. Be adventurous! You never know you might actually like it! Now wouldn’t that be a surprise? Go for a variety of textures, colors, favors and aromas then just mix them all together and see what you come up with! Orange, Jicama & Avocado Salad
Serves 4
Ingredients
2 large oranges
Juice and zest of 1 lime
1 tablespoon apple cider vinegar
2 tablespoons extra-virgin olive oil
Pinch of cayenne pepper
Sea salt and freshly ground black pepper
1 small jicama (1 pound)—peeled, quartered and thinly sliced
2 avocados, quartered lengthwise and thinly sliced
1 cup crumbled feta cheese
1 tablespoon freshly chopped cilantro
How to Make
Take a small sharp knife and cut off all the peel and white pith off each orange. Working over a small bowl, cut in between the membranes to release each segment of orange.
Squeeze the membranes over a bowl to extract the juice. Whisk in the lime juice, vinegar, oil and cayenne; season with a pinch of salt and pepper.
Add the jicama and let stand for 15 minutes. Fold in the avocado, feta and cilantro; serve.
